Christophe Chocolaterie Patisserie celebrates 2016 by hopping across the street to a larger location at 4717 Hastings Street. “Burnaby Heights is a growing community, and Jess and I are immensely thankful for the support and business we’ve received during the past few years,” explains Christophe Bonzon, owner of Chez Christophe. “The new space is perfect for our growth. Not only do we have more seating available, but the move has enabled us to expand our menu to include sandwiches and expand our coffee program as well as focus on our wholesale clients.” At 2,100 square feet, Chez Christophe features interior seating for 19, along with outside patio options during the warmer months. The interior features a modern European ambience, based on Bonzon’s background and upbringing.
2015 was an amazing year full of surprise for Christophe. He participated at the 2015 World Chocolate Masters Canadian Final and won four awards. Months of dedication, passion and chocolate mastery were distilled into two days of competition at the 2015 World Chocolate Masters Canadian Final in Montréal, Quebec. The theme was “Inspiration from Nature” and first-timer Pastry Chef Christophe Bonzon won the hearts of judges, coming away with four out of five awards as follows: Best Moulded Praline, Best Chocolate to Go, Best Cake of the Day and the Media Prize ‘Coup de Coeur’. Overall, Bonzon placed second at the podium.
In 2014 one of Christophe’s creations travelled the world and was bestowed with Gold at the 2014 International Chocolate Awards World Final (London UK) in the White Chocolate Ganache and Truffle category. The winning creation is a pineapple and avocado ganache infused with fresh vanilla beans and Szechwan pepper with a soft pineapple jelly and lime zest, enrobed in blonde chocolate.
Christophe discovered chocolate at the age of ten whilst he was helping his mother make chocolate truffles as a gift for Christmas. Since then the passion for sweet food never left him. After numerous postings around the world, Christophe and Jess now call Canada their home. After arriving in Canada with his wife Jess, Christophe was the Executive Pastry Chef at the award-winning CinCin Ristorante before opening their own shop. Christophe is a firm believer that you are constantly learning throughout your life for the learning curve never ends.
Remy - Pastry Sous Chef
Born in the tiny tropical country of “French Guiana" Remy was blessed at a young age with the best that this world has to offer ; diversity of culture and of flavours. It is the home of the Creole, Brazilian, French, Chinese, Hmong the native tribes of the Amazon forest and many other cultures. He wasn’t shy to taste new things, as fresh tropical fruits with full flavour potential were as easy to procure as throwing a rock to the sky. Remy moved to Vancouver after spending two years in Saskatchewan as a teenager. His love for cooking and for the hospitality industry did not ignite until receiving a dishwasher job with chef Alex Tung at Tapenade Bistro. He loved the food, pace, energy, brotherhood and the lessons that the job taught him
Remy had the opportunity to meet a lot of great chefs who have helped shape him into the cook that he is today. After realising that he liked to balance flavours, textures and play with temperatures he made the switch to desserts. Once he switched he never went back. He brings all the lessons and knowledge that he learned from all these years to Chez Christophe. His goal is to make delicious desserts and make people happy with them.
Laure Wahli - Head Chocolatier
Born in a small village in Switzerland, Bevilard (population 1700), Laure found her love of desserts at a young age. She began her life in the kitchen at age 15 and completed a five year apprenticeship in pastry, bread and chocolate. Laure is all about precision and details, which makes her fit perfectly into the world of chocolate. The diversity of chocolate inspires her and fuels her creativity. She has been with us since February 2015.
Seeing the joy that her creations give people brings a smile to her face. In her free time Laure enjoys a wide variety of activities ranging from independent sports to downhill biking. You can find her with her camera taking photographs on days off or dreaming of her next adventure in travels.
To this day, she misses real cheese.
Lailla - Front of House Manager & Barista
Originally born in Dewsbury, United Kingdom, Lailla moved to Canada when she was just one year old. Passionate about coffee, both the technical and artistic sides intrigue her. Knowing that the field of coffee is always evolving with opportunities to continuously learn, really makes her love going to work each day. Balancing flavours of the bean and working on presentation is a passion and teaching these skills to others became a natural fit for her. She has been wowing us with her coffee skills since November 2015.
In her free time, Lailla loves to go hiking with friends and loves being in the kitchen. Other past times include reading and sketching and doing all things crafty.
